The man, who was the victim's stepfather, did not appear on Monday, and was represented by solicitor Tim Cain.
The man is charged with manslaughter, strictly indictable, reckless grievous bodily harm (DV) and being the holder of a category A or B licence not have approved storage.
The charges relate to the death of the three-year-old in August last year.
Police were told by the child's parents that they were walking across the Oberon soccer fields when the child became entangled in the leads of the family's pet dogs and fell.
The boy was airlifted to Westmead Children's Hospital but died several days later.
Mr Cain told the court he had instructions from his client to plead not guilty to the ammunitions charge, only to be told by magistrate Michael Allen that his client had already pleaded guilty to the charge on a previous occasion.
DPP solicitor Ashlee Weir told the court police were still waiting on an expert's report and sought a four week adjournment in the matter.
Mr Allen ordered the balance of brief by May 18, with replies on June 1. No application for bail was made by the accused, and it was formally refused by Mr Allen.
In respect to the ammunitions charge, Mr Cain told the court he would seek further instructions from his client.
Mr Allen told Mr Cain if his client sought to withdraw his earlier plea of guilt it would require a notice of motion.
The matter will be back before the court on June 1.
