Attendees will dine under a giant marquee on Russell Street outside the Bathurst Court House at the October 9 event.
Pronto Catering regional event manager Belinda Thompson said the night will showcase all the best in local produce.
"It's our opportunity to not only support the Bathurst region, but to showcase our local produce and the wineries and distilleries and breweries," she said.
Stone Pine Distillery has been asked to help cater for the event, and owner Ian Glen has created a gimlet to be used as an aperitif on the night.
The gin and lime juice cocktail will feature Stone Pine's own Dry Gin.
"It's a classic gin cocktail," Mr Glen said.
He said Bathurst's reputation as a location for food, wine, beer and spirits is growing, and the gala ball will help enhance it.
The ball will be one of the final Bathurst Regional Council- endorsed events on the bicentenary calendar.
Mayor Gary Rush said the focus of the evening will be on celebrating Bathurst's bicentenary, but there will also be a number of special guests as part of the evening's entertainment.
Cirkus Surreal, OzScot Australia, The Business Showband and Mitchell Conservatorium performers are among the entertainers lined up for the ball.
"A marquee ball in the middle of the city's historic town square will create a unique atmosphere inviting the community and visitors to be a part of the continuing celebration that is Bathurst's bicentenary," he said.
Cr Rush encouraged any members of the community to come along to the black tie event. Tickets will be sold in tables of 10 for $1500.
"I would really encourage people to act this week. I don't think tickets are going to last," he said.
Tickets are available from council on Russell Street from 8.30am to 4.45pm weekdays.
