Brothers Campbell and Greg Hedley decided to create Two Heads Brewing after returning home from living overseas.
They wanted to get back to the country and start a business together that celebrated a shared interest.
Campbell said the historic mill on Piper Street is the perfect place to house the new Two Heads Brewery bar and restaurant.
“It had that mix of being in the right location and was an old building that could really work for us,” he said.
While local companies were brought in to work on the electrics and plumbing, most of the actual construction work was completed by the two brothers.
“We pretty much did all of the fit out and build ourselves,” Campbell said.
“My brother, Greg, has been on the tools the whole time.
“We’re pretty proud that we did most of the work on our own.”
Two Heads will not only have its own brew and other selected local beers on tap, but will also offer meals.
Campbell said he and his brother wanted to make sure that, while the brewery would be a tourist spot, it would still cater to locals.
“Ultimately, we decided that we wanted to build a place that we wanted to go to,” he said.
And, in a big nod for the newly-opened brewery, The Sydney Morning Herald has approached the brothers for a feature story on tourism.
“They’re doing a story on old buildings and restoring old buildings,” Campbell said.
“They’re doing a bit on the mill and on us.
“We’ve been really lucky actually; local media has been really supportive and there’s already been a bit of interest from people out of Sydney.”
Campbell hopes that with so many breweries popping up around the Central West people will come to the area on weekends to check them all out.
“I really think that is going to be a good thing for Bathurst; hopefully we can drag some of those craft beer lovers over the mountains,” he said.
