The 22-metre high (75 foot) ferris wheel will be in operation each day during the 15 day festival.
Ferris wheel owner Brad Verfurth said the ride, which was built in 1964, has been been in his family for six generations.
“There was a time when it was the biggest travelling one on the circuit,” he said.
Mr Verfurth said the vintage ride is always a crowd favourite and many people are often nostalgic about having ridden it in the past.
“It’s amazing how many people remember riding it when they were 20 or 30 [years old],” he said.
Saturday night marks the start of the winter festival, with the Ignite the Night street party in Kings Parade from 4-9pm.
A host of free family-friendly entertainment will be on offer along with a range of food, wine and beer stalls.
A giant ice rink has made a return to the festival and will be located next to the ferris wheel on Russell Street, outside Bathurst Court House.
Tickets to ice-skate are $5 children (2-13 years) and $10 for those aged over 14.
The ferris wheel is open to people of all ages and tickets are $5 each.
Ferris wheel opening hours are 9am-8pm Monday to Thursday, and 9am-9pm Friday to Sunday. Tickets can be purchased from the ride.
