Copeland took 2-33 off 7 on the day, as NSW went on to win back-to-back one-day domestic titles.
While Copeland performed well, he was outshone by Young product Nathan Lyon, who took 4-10 off 10 in the six wicket win for the Blues.
NSW had been chasing 187 to win after the Blues had bowled the Bulls out after 46.5 overs.
Moises Henriques and Kurtis Paterson scored a combined 162 off 222 balls to help steer their state to success.
It was a day to forget for Queensland, as Australian test player Usman Khawaja scored a team high 35 off 52, as the Bulls racked up a disappointing 186 all out.
Michael Neser was the stand-out bowler for the Bulls, taking 3-20 off 9, with his wickets coming at time when things looked much brighter for Queensland, when NSW were 3-19.
Overall, Copeland took 11-265 off 50 throughout the whole competition and Queenslander Marnus Labuschagne named player of the series.
Copeland will now shift his attention to his club side St George in the Sydney Grade Cricket first grade competition.
