The event, which will be held at the Cec English pavilion at the Bathurst Showground, has sold out, with high profile farmer Matthew Evans and My Kitchen Rules judge Colin Fassnidge to be the main attractions.
Trout will be available for purchase at Saturday’s Farmers’ Markets, also at the Bathurst Showground, for $15 each.
Bathurst High agricultural teacher Peter Matus said the trout that will be on sale and used at the Sustainable Supper first arrived at the Bathurst High Trout Farm in 2016.
“The ones we’re processing now have been carried over from 2016,” he said.
“We have about 200 left and we’ll have over 100 on sale on Saturday.
“We will also be selling free-range eggs.”
When trout arrive at the farm, they are roughly five centimetres long and weigh roughly five grams.
By the time they are ready for sale, the trout are roughly 25 centimetres long and weigh roughly 600 grams.
The trout project is in its eighth year, with Mr Matus having taught at the school for five years.
Students also care for chickens, geese, turkeys and sheep.
