And it’s been going on for a few years now.
Since 2010, Bathurst High has been running an aquaculture program that is now producing thousands of farm-raised fresh trout each year.
The trout are bred in an $800,000 aquaculture centre to be sold for food.
As part of the process, the students prepare the trout for the table by gutting and cleaning them.
The trout start off as fingerlings about 3cm long and in just 12 months average around 99 grams.
And if you want to try some for yourself, you will get the chance this weekend.
Students will be selling trout at the Bathurst Farmers’ Market, Bathurst Showground, on Saturday morning.
Parade’s sampled them in the past and can assure you they’re top quality.

As usual, copies of the paper started selling at a good rate early in the morning and the demand kept up throughout the day.

Wrong call on takeaway order
“UNLISTED” phone numbers are becoming more popular as people seek to more closely guard their privacy, but one local business apparently is not a fan.
Parade tried to place a phone order for some takeaway food over the weekend but was rejected by the local eatery because no incoming phone number came up on their display.
Parade was told they would not take an order from a private number.
That left Parade two options: Either phone back on a mobile or place the order somewhere else.
We bet you can guess which way it went.
