Taking on a Universities outfit that included Indian star Harmanpreet Kaur, Griffith demonstrated why she has been included in the New South Wales Breakers squad this season.
In pursuit of 153 for victory, Griffith arrived at the crease with Penrith under pressure at 2-33.
But she impressed with the bat, making an unbeaten 56 to see her side over the line and within reach of the top four.
It was the second half century Griffith has hit this season – the other a 54 against St George Sutherland – and her 86-ball innings included four boundaries.
Earlier as the Penrith attack bowled out Universities in the space of 44.2 overs, Griffith did a job with the ball as she took 1-41 off her 10 overs.
