That’s the philosophy barista Ben Berger is adopting after opening the doors at Bathurst’s newest cafe.
Brilliant Street (on, you guessed it, Brilliant Street) has been opened by the owners of Orange’s equally well-named Byng Street cafe.
It stands at the western entrance to Bathurst just 100 metres from the intersection of Stewart Street and the Mitchell Highway.
Mr Berger said the owners had settled on a site just out of the CBD to catch early morning tradespeople and workers travellers between Orange and Bathurst who did not want to go all the way into town.
“We can also get the uni traffic and people like the opportunity to just park on the side of the road, get their coffee and get going,” he said.
“We’ve already had a few returning customers which is a good sign that they’ve enjoyed the coffee and there is a lot of potential for growth as word of mouth gets around.”
Mr Berger, a Bathurst local, started in the industry at Crema On George in 2014 and has worked at Byng Street for the past 18 months.
He said the keys to a good coffee were starting with a “good base” (the beans) and ensuring the milk was the “right consistency”.
“If it gets too hot it will burn and destroy the flavour,” he said.
