Those are some of the meats inside Mountain Meats’ sausages, with no more than 24 different flavours on offer for customers during Race Week.
From beef Guinness wild mushroom and roast garlic, to spicy pulled pork and even meat lovers pizza, there’s at least one flavour that should satisfy customers.
Mountain Meats owner Paul Smith said planning takes about six weeks.
“We try different ingredients out, to see what works,” he said.
“We tend to try different things each year.”
Mr Smith said his favourite flavour is the pork chilli and fennel.
“Pork is a great meat to work with, especially with chilli,” he said.
“Our wild turkey bourbon beef steak sausage and beef and bacon brekkie chipolatas have been popular ones this year.
“We’ve been flat out this week but it’s good. We look forward to Race Week every year. It’s really great for the town.
“It’s definitely been great for our business.”
