The home side were rolled for 52 runs in their pursuit of Sydney's 191, ending their magic run through the statewide knockout tournament.
Big second and third wicket partnerships for Sydney took them to 3-131 before Bathurst's Ben Roffe (4-52), Nic Broes (2-22) and Nathan Ward (2-28) limited the damage over the back half of the innings.
Bathurst High made their way to 0-15 before a disastrous collapse of 5-8 arrived.
The second of the Bathurst wickets to fall was the key dismissal of Nic Broes, for just one run.
Broes' eyes lit up when Sydney paceman Hunar Verma, NSW Premier Cricket first grade bowler for Blacktown, sent him down a short delivery.
The Bathurst captain - who had yet to be dismissed throughout the entire shield run - pulled the ball straight to the square leg fielder and sent the Sydney squad into raptures.

Opener Roffe (16) made the most promising start of the Bathurst boys before he struck a full toss to mid on.
Verma finished with figures of 4-7 from six overs in a destructive display of bowling.
Bathurst High School coach Paul Abbott said the rough start with the back had his team on the back foot from the early overs.
"It was always going to difficult after losing those early wickets and losing Nic early on certainly hurt," he said.
"I was very pleased with our second 20 overs where we were able to restrict them to 191.
"The disappointing thing was that if we performed with the bat we would have been a reasonable chance.
"There was certainly same exceptional bowling from the Sydney boys, in particular from Hunar Verma. He took the most wickets at the NSW All Schools carnival last week and was selected in that NSW team alongside Nic.
"I'm very proud of their efforts. They've done exceptionally well to reach the last four of this CHS section of the draw. It's an outstanding achievement."
The match was moved to Police Paddock following Monday's rain.
