The seasonal drop isn't readily found in Australia and, being one of few made domestically, the Bathurst distillery is introducing a rare flavour.

Ian and Bev Glen, along with their two kids, have run the brewery for 11 years since returning from Scotland and they brought the influences of their heritage with them.

"It's a flavour I have fond memories of from my childhood as it grows well in cool climates," Mr Glen said.

The bright pink gin is so popular among locals that Mr Glen, the solo drop-maker, is struggling to keep up with demand.

"We launched it at the Bathurst Farmers' Market and sold every bottle," he said.

The rhubarb is sourced locally, is in season and, with its eye-catching look, has become fashionable.

"It fits in very well with autumn, it certainly gives the gin a totally different flavour," Mr Glen said.

"It's unlike anything we've done before."

Producing the drop is a labour-heavy task. Mr Glen chops up the rhubarb before infusing it but, because the plant doesn't have an intense flavour, he requires plenty to get the flavour and bright colour.

As sweet as it looks, the gin has a touch of sugar to balance the tartness and acidity of the rhubarb, a variation from the distillery's typically dry gins.

"I'm recommending a pink G T with ice and slice, very simple."

The drop is available at the Ferment cellar door in Orange and, more locally at the upcoming Bathurst Farmers' Market.
