The 31-year-old had been hit by a runaway car in Kurumben Place and was suffering life threatening injuries.
Sarah was airlifted to Sydney where doctors had no option but to amputate her right leg above the knee.
The accident happened on Tuesday, May 8, when a Nissan X-Trail, which had been parked at a Kurumben Street property, rolled down the driveway and hit Sarah, pinning her between the car and wall of the house.
She remained trapped as emergency crews worked to free her. They also had to support the front wall of the house which had been compromised in the incident and was a risk of collapsing on Sarah.
Sarah was eventually freed by police rescue, taken by road ambulance to a waiting helicopter and flown to Westmead Hospital where she underwent life-saving surgery. Her lower leg was amputated.
Sarah now has a long road ahead. She will remain in Westmead Hospital for the new few months, undergoing rehabilitation and possibly more surgery.
Alisha Bell, one of Sarah's best friends, is among a group of supporters who have launched a Go Fund Me page with the aim of raising $40,000 to help cover Sarah's bills while she's in hospital.
Ms Bell has been by Sarah's side in the week since the accident and said while she is in a lot of pain, she's an incredibly strong woman who still plans to fulfil her dream of climbing Mount Kosciuszko.
Ms Bell said it has obviously been a terrible week for Sarah and all who love her, but they are focusing on the positives.
"She lost a lot of blood so the doctors made the decision to amputate [her lower leg] but she's very strong, really really strong," Ms Bell said.
"She stood up for the first time yesterday [Monday]. It's crazy how well she's doing."
But while Sarah is impressing the doctors in Sydney, the reality of life goes on in Bathurst and there are still bills to pay.
This is one of the reasons Ms Bell, along with other friends, started the Go Fund Me Page.
They hope to raise enough money to cover Sarah's bills while she's in Sydney so she doesn't have to worry about anything other than her recovery.
"There are bills to pay and things that need doing but all we want Sarah to think about is getting better," Ms Bell said.
The page has raised $2000 so far and Sarah's friends have set a target of $40,000.
"Sarah is missing her dog and wants to get out of hospital but she also knows she has to do whatever the doctors say to get get better.
"We're just hoping to raise as much as possible to give her something to look forward to and get her home.
"Sarah's an independent woman and being only 31 she has the rest of her life ahead of her. The money will help her with alterations needed for her house and car and equipment needed to help get her mobile."
