Attendees throughout the day will be able to enjoy alcoholic beverages that include wines, beers, cider and the popular mulled wine.
And one Bathurst winery that will be in attendance is Grass Parrot Vineyard, who has attended ever Bathurst Winter Festival since its launch in 2015.
Owned by Andrew and Sarah Macarthur, Grass Parrot Vineyard planted its first vine in 1997, before releasing its first commercial wine in 2008.
Since the festival launch for the Bathurst bicentenary, the couple have been big supporters of the event.
"We went to the first one in 2015 and it was amazing how everyone got around it," Ms Macarthur said.
"It's certainly grown over the time and what we've noticed, there's more out of town visitors.
"The crowds have increased and the demand of the mulled wine outstrips how much you make."
Grass Parrot was one of four wineries to offer mulled wine at Ignite the Night last Saturday, with the other three being Renzaglia Wines, Vale Creek Wines and Heifer Station Wines.
Mulled wine is usually made with red wine with various spices, served warm.
Ms Macarthur said the Bathurst Winter Festival is great because it gives local wineries a chance to showcase their wares.
"A lot of people don't know we have wines in Bathurst and that it's actually produced here," she said.
"The festival is really great because it gives local vendors and produce people an opportunity to showcase what they can do in the area."
And while there'll be plenty of drinks and food on offer, Brew and Bite will feature the silent disco, fire performers, local musicians and a dessert corner.
All the regulars will be there including the ice rink, illuminations, giant ferris wheel and the two-storey carousel.
Brew and Bite gets underway at midday on Saturday and will run through to 9pm that evening.
