Eleven judges begun marking wines on Tuesday morning and will judge over 200 wines a day before deciding on the winners on Friday morning.
Exactly 771 wines have been entered for this year's competition.
National Cool Climate Wine Show chairperson Lee Baxter said entries have come from all over Australia.
"They've come from a broad variety of cool climates in Tasmania, Western Australia, Victoria and NSW," she said.
"Chardonnay has been a huge class and the pinot noirs have been popular too.
"A majority of our local wineries have been well represented. Renzaglia Wines have won a few golds recently, so it'll be interesting to see how they go."
Across the week judges will give their score on each entered wine, before discussing together and giving each wine a final score.
The public wine tasting night will run from 6pm-9pm at Panthers' Skyline Room.
Tickets cost $40 and include a long stem glass upon entry, complimentary nibbles and local music.
Tickets can be purchased online at www.coolwines.com.au.
