Copeland claimed two wickets in the first session to finish with 5-63 from 25 overs, giving him 301 first class wickets for NSW and 367 overall wickets at that level including for Australia and English County Northamptonshire.
It was a special day all round for Central West talents in the NSW team as Cowra's Daniel Hughes brought up back-to-back hundreds in the same match.
Hughes hit a new highest score of 136 on Wednesday after bringing up 103 for the Blues in their opening innings.
The match appeared to be heading for a draw as South Australia's middle order provided the resistance they needed in search of the draw on Thursday.
However, Copeland struck again in the South Australian second innings to cap off a special win.
Copeland scored the breakthrough wicket of Travis Head before ploughing through the lower order to finish with 4-60.
"It was a pretty special day for the Blues. We're all really proud to wear the baggy blue. Hughesy and I sat down with a beer after the game, shared a hug and talked about how lucky we are to get out there and play for NSW," Copeland said following stumps on Wednesday.
"I do remember my first wicket. It was Ryan Broad, nipped back LBW. It was after a wicket-less first session at the SCG. I remember a lot of my wickets. I'm a bit of a cricket nuffie like that," he laughed.
Copeland said it's been a pleasure to have a stack of fellow country players around him in the state team.
"We've got a lot of country boys. I played my debut test with Nathan Lyon and we grew up in the same area and I played a lot of cricket with his brother. Daniel and I played Western Zone together," he said.
"It's really special. Those roots go a long way back."
