El Guapo Cantina got into the spirit of the annual Cinco de Mayo festivities on Tuesday with a unique menu item, the 'Chimichanga Magnifico.'

The creation, a jumbo take on the popular Tex-Mex appetiser, was put put together specifically for the occasion to bring some joy and fun for regular customers.
"We used the opportunity to celebrate the process of creating unusual, obscure food items, as well as mark a date of significance to Mexican-American culture," El Guapo co-owner Damian Kay said.
"Chimichangas are among our most popular menu items, so we thought we'd attempt a massive, 'magnifico' version of the dish."
Head chef Vaughan Thompson said the dish includes all the regular chimichanga ingredients; beef mince, cheese, rice, tomatoes and corn wrapped in a tortilla; but with three times the regular helping.
"We've also added borracha sauce and jalapenos to give it an extra kick," Mr Thompson said.
"I wouldn't recommend it for health-conscious folk, but you could easily get a few meals out of it; I tried finishing a whole one on a test run and struggled."
Cinco de Mayo is Spanish for the fifth of May, and is commonly observed in Mexico and the United States each year to commemorate the Mexican army's victory over the Second French Empire in the Battle of Puebla on that date in 1862.
Mr Kay said the move to take-away service has allowed El Guapo to keep business ticking over during the COVID-19 period.
"We've been open throughout the whole period and while it's taken a little while to get the hours, staff allocations and food supplies right, we've come upon a system that works," he said.
"The support we've received from the community is absolutely phenomenal, and we look forward to bringing further interesting dishes for Bathurst to try."
Mr Kay and his partner, Laura, took over as owners of El Guapo in October last year, and have since introduced a revamped menu and diverse craft beer range.
