The mini markets, held on the first and third Saturday of each month during the warmer periods, serve as an opportunity for visitors to peruse fresh organic produce, view unique crafts and enjoy live music.
Co Op manager Cathie Hale said the mini markets are driven by a strong focus on community.
"We're always encouraging members and volunteers who make anything themselves to set up a stall at the markets and connect with the wider community," Ms Hale said.
"Some of our members are currently growing seedlings to take advantage of this welcome spring weather, and we hope to urge anyone with a slight green thumb to get outside and start growing crops."
The event will feature live music from local duo The Mats [Matt Williamson and Mat Hale] and Bruce Inwood.
Ms Hale said the location of the markets [Macquarie Plaza] provides an accessible location in the centre of Bathurst for members of the community to stop by.
"Even though we've well and truly outgrown this space, it's hard to find a comparable location allowing us to hold these markets," she said.
"It's a chance for producers to make some extra cash through tailored goods you can't find in a supermarket."
Ms Hale said the Co Op has enjoyed a fruitful period of business during COVID-19, with more people cottoning on to the importance of shopping organic.
"I think people are starting to think more about their health and trust our diverse range of organic produce will help substantiate a healthy lifestyle," she said.
"Not only does organic produce help reduce packaging, but it also gives people plenty of confidence in their lifestyle choices."
