'Cosmo' is a combining word used to describe the world or universe, and Bathurst brewer Ian Carman has named his new business as such to describe the relationship between brewing and the land.

Mr Carman's Cosmo Brewing will enter the beer market next Monday, October 12, with a launch event at Church Bar for his debut offering, a pilsner.
"It's been an idea in the making for at least three years, and one of my top priorities is to brew beers for the local community to enjoy and call their own," Mr Carman said.
"Through Cosmo Brewing, I want to highlight the Bathurst region through those who live on the land, as everything that goes into beer [barley, hops, fruit etc.] comes from the fields."
Mr Carman has commenced production in Locksley, sharing the brewing space with another popular local brewery, Fish River Valley Brewing.
He said the pilsner set for launch next week was brewed during the late August snow event that swept across the region.
"The pilsner is a cool climate beer that ferments at lower temperatures, which produces a crisp, clean and easy drinking beer," he said.
"It tastes great, and I think people will really enjoy it."
Mr Carman, who cut his teeth as a brewer at Two Heads Brewing, said he has a number of other beer varieties in mind to produce in the coming months.
"I have a sour beer in the works at the moment, which is a refreshing beverage for warmer weather," he said.
"Sour beers pair really well with fruit, and I hope to work with some of the local orchards to produce some fruit beers for special release."
Mr Carman said there's massive potential for Bathurst to grow as a centre for beer production.
"When you drive down Upfold Street and notice the numerous pallets of empty beer kegs, it proves how much Bathurst loves its beer," he said.
The launch event will get under way next Monday from 4pm, with live music to be provided by Joe Simmons.
