It is because the Rose brothers - Matt, George and Trent - will stage that fight as part of a huge double-header their company No Limit Boxing is promoting.
The Roses will put on the biggest boxing event in Sydney in more than a decade on December 16 at Bankwest Stadium as not only will ex-NRL star Gallen square off in the ring against former UFC 'king of walk-offs' Hunt, but Tim Tszyu will meet Bowyn Morgan.
It is an event which has been dubbed the 'Sydney Super Fight' and will be another huge moment for the brothers.
While George, Matt and Trent all went on to impress with their rugby league skills after graduating from Kelso High, they are now making a name of themselves as promoters via No Limit Boxing.
In the seven years since they founded their company they have staged 11 events, the most recent of which was August's huge Tszyu versus Jeff Horn card in Townsville.
Prior to that, Matt Rose revealed Carrington Park was one of four venues on a shortlist to stage the Gallen versus Hunt bout, which was initially planned for Halloween.
While Sydney ended up getting the nod over Bathurst and the date was moved to December, the Rose brothers are still excited for it to go ahead.

It will be the first stadium fight in Sydney since the Anthony Mundine-Danny Green bout in 2006 and is expected to attract both a big crowd ring side and a huge television audience.
"I expect it to not only be the biggest crowd for a fight in Australia this year, but also the biggest audience - full stop," George Rose, the chief executive officer of No Limit Boxing said.
"Why wouldn't it be? You've got the undisputed star of Australian boxing in Tim taking on the best from New Zealand in Morgan.
"Then there's the two legends, two absolute sporting icons in Gal and Mark. Everyone knows there's no love lost between these two.
"What's not to love?"

While seeing Gallen and Hunt - two men who have done plenty of trash talking - finally square off will be a treat for boxing fans, so too will Tszyu's return to the ring.
Tszyu's win over Horn was clinical, stopping his rival in the eighth round as he took his record to 16 fights without loss.
His opponent for the 'Sydney Super Fight', Kiwi champion Morgan, also has an impressive record.
Morgan has not lost a fight since 2016 and his last three wins have come via knockout. He is ranked in the top 15 of International Boxing Federation welterweights.
George Rose knows No Limit Boxing is fortunate to be staging such an double-header in a year which has seen so many sporting events cancelled due to COVID-19.
"It's incredible to be in this position to put on one of the biggest live sporting events in Australia after the year we've all had," he said.
"Hats off to everyone, especially the New South Wales Government, for the way in which they have managed the response to the pandemic, because the reality is without it, we wouldn't be here today announcing this exciting event for punters to enjoy the week before Christmas."
