Protesters have since Monday been demanding the abolition of an agricultural promotion law they see as undermining their rights.
Clashes with security forces and with people stuck in vehicles were reported in some places.
Demonstrators on Thursday blocked the Pan-American North highway in at least three places, including Viru district, where one farm worker was killed, according to daily El Comercio.
Police General Angel Toledo Palomino told the daily that the circumstances of the death were unclear and under investigation.
Two police officers were also reported to have been injured.
The deaths of two people during anti-government protests last month prompted the resignation of interim president Manuel Merino just five days after he had succeeded Martin Vizcarra, who was impeached.
Merino's successor Francisco Sagasti said he would seek changes to the agricultural promotion law, but not to scrap it entirely, according to daily Gestion Peru.
