Part-owner Nathaniel Mason and his wife Lauren will be bringing their bakery to the old Pee Wee's Bakery site in Howick Street.
The couple have a great customer base at their Kelso shop and are hoping this will be replicated at their second location.
IN OTHER BUSINESS NEWS:
"Out here we have the whole of Kelso come here, so I think we could do a whole other sector of Bathurst, a whole new customer base in town," Mrs Mason said.
"People always say it's so far to come out, but they want to come out, so we'll see how we go.
"We were going to go into the old Pee Wee's to start with, but we came here instead and then we saw that it's still vacant and we thought why not take the chance?"
Bakehouse on the Boulevard is a real family affair.
It is owned by Mr Mason and his father, and managed by Mrs Mason. Mr Mason is also one of the bakers and his sister and niece are both employees.
However, with the second store opening, the couple are looking for more staff and being related is not a requirement for the job.
"We've been looking for staff for the last couple of weeks," Mrs Mason said.
"We're nearly full. I've got a couple more people to come in and we've started putting people on trials and we've got a couple coming in a few weeks to start so they can learn here [at Kelso] before we open there."
Hoping to open towards the end of July or early August, Mrs Mason said they're a bit nervous with the current COVID restrictions becoming so strict, but they're hoping for the best.
"The first time COVID hit, we got busier. This time we've been a little bit steady, but we'll see how we go," she said.
"It does scare us a little bit in town, but we've had so much support here, we're hoping we'll get that in town as well. Fingers crossed."
Bakehouse on the Boulevard is currently open from 5.30am to 5pm and Mrs Mason said they plan to have the same hours at their second store.
"Once we get up and going we'll see if those hours work as well in town as they do here," she said.
Mr Mason has been a baker all of his life, completing his apprenticeship at the age of 16 in the same store in Kelso that now houses Bakehouse on the Boulevard.
As well as freshly-baked bread, pastries and desserts, the bakery has a fresh salad bar for sandwiches and sells coffee and milkshakes.
These options will also be available in the new CBD bakery.
