Stone Pine Distillery owner Ian Glen added a lemon-flavoured gin to his collection on Tuesday.
What sets his Lemon Drop Gin aside from others is the inspiration behind the way it was made - an Italian-style liqueur called Limoncello.
IN OTHER NEWS AROUND BATHURST:
"The way you extract the lemon flavour in Limoncello is different from the way you distil a gin," Mr Glen said.
"The way that you make Limoncello and the way that we've extracted the lemon flavour for this new gin is that we've actually just macerated the zest in alcohol, we haven't distilled it.
"So you extract a different type of flavour and you extract the colour as well; that's why it's yellow, whereas when you distil a botanical it's colourless."
Stone Pine has been making seasonal gins for the last few years.
The first was Orange Blossom.
With the distillery's Limoncello proving very popular, Mr Glen thought it was a good flavour to release.
"Lemon and gin go really well together and lemons are in season, they're a winter crop, and I was keen to release another gin, so it all just came together and seemed to work quite well," he said.
"It's got a different quality to the lemon flavour. It's really, really zesty, like you've just bitten into a bit of lemon zest."
Although COVID has caused business to slow, Mr Glen is remaining positive and is hopeful that the distillery will see the light at the end of the tunnel shortly.
"The one positive thing is the internet ordering has picked up a little bit; even though they may be stuck at home, they are still able to order online," he said.
The new gin can be purchased from the Stone Pine website.
