Bathurst brewer Ian Carman, who has spent the last 12 months honing his Cosmo Brewing brand, has used the lockdown period to continue engaging with local beer enthusiasts through pop-up takeaway events, as well as strategising for the future.
"We launched this brand into a COVID-environment, which has played a significant role in influencing and informing our business direction," Mr Carman said.
"The local businesses that have got on board with us have certainly helped expand Cosmo's profile, as have those in the community who have been eager to try some local beer."
Over the past year, the Cosmo Brewing brand has expanded to seven businesses across Bathurst, Orange and Portland, where consumers have been greeted with a unique selection of pilsners, saisons, sours and extra pale ales.
Last Saturday, Mr Carman spent two hours at Dogwood [a valued supporter] selling takeaway growlers of beer for locals looking for a lockdown 'beer-o-clock', and will continue this on Fridays and Saturdays at the venue from 3pm to 5pm.
"I'm very mindful of how lucky I am that beer is a product that keeps relatively well, considering there's so many hospitality businesses impacted harder by COVID-19 restrictions," he said.
"It certainly helps with morale to see the beers are still moving, and partnerships with like-minded businesses are essential to growing the local food and drink sector."
Mr Carman said the brewery is currently in the process of working towards an increased production output using organic, sustainable produce.
"We're looking at securing more equipment [more barrels, extra tanks etc.] to help us focus on multiple beers at once," he said.
"We are also committed to a reduction in waste, particularly single-use plastics, as well as a strong focus on regenerative agriculture."
