Owner Cameron Beard said he received a phone call at 9.30pm from the security company, after the alarm was triggered, to inform him of the robbery.
Mr Beard was on the property at the time of the intrusion, but couldn't get to the store in time.
IN BUSINESS NEWS AROUND BATHURST:
"I'm living on-site at the moment, there's a house out the back, so I was down there within a minute, but I'd just missed them," he said.
"We got one [bike] back Saturday night a couple of hours after it happened, but there's still one we haven't found yet."
The business has put out a $1000 reward for anyone who can return the remaining stolen motorbike.
Beard Brothers Motorcycles has been in Bathurst for 15 years, for the most part on Durham Street.
The business relocated to Littlebourne Street in Kelso in October last year, where Beard Brothers has had two robberies within 12 months.
After the first break-in, the stolen motorbike was found five months later in Dubbo, but Mr Beard is hoping this latest stolen bike is recovered sooner.
"The police are on it now," he said.
"There's been a sighting of the bike, so they're on it now."
In addition to the stolen bikes, a large amount of damage was done to the showroom during the process of the robbery.
A lot of motorbikes were pushed and knocked over, including some expensive ones, in order to remove the bikes that were stolen.
Mr Beard believes the intruders stole the particular bikes they did due to their size and weight.
"We've got bars on the windows, so they had to lift them over the bars, so they were probably the smallest and lightest ones that they wanted," he said.
Security footage showed two masked people breaking into the showroom and one standing outside keeping watch.
Mr Beard said they just want their bike back and for people to leave the store alone.
