The successful initiative was launched during the COVID-19 pandemic in 2021 as an incentive to visit businesses that were among the hardest hit by lockdowns.
Adults could get four $25 vouchers: two for dining and two for entertainment and recreation.
It was announced on Thursday that the program would be expanded, seeing everyone receive two more vouchers, which are expected to become available in December.
The Oxford Hotel's Ash Lyons welcomed the news of more vouchers, saying they helped to stimulate his businesses previously.
"For us it was really, really successful. It really stimulated activity. It got a lot of movement, especially because we did the double dollars; we doubled people's voucher value if them came to dine with us Monday to Wednesday," he said.
"For a lot of people that really helped them out."
Although happy for more vouchers, he would have preferred to see them made available earlier.
As the regional travel ban has been extended to November, he said businesses don't have the tourism they expected as they opened up, and the vouchers would have helped to incentivise locals.
However, Bathurst Business Chamber president Catherine Fitzsimons thinks businesses will get more bang for their buck from the vouchers in December.
"The idea behind them is to support regional businesses by having people travel and there will be many, many more people able to travel in six weeks' time," she said.
"I think we will get a lot more benefit from it. If it came in too early, then people might spend their vouchers at home and then we might not see that benefit out here."
Dine vouchers can be used in all kinds of establishments, including cafes, restaurants, pubs and wineries, but the discover vouchers require a little more thought.
Museums are among the venues that can accept them and Bathurst Rail Museum's Ben O'Regan is looking forward to December when people will have access to them, knowing it will incentivise both locals and visitors to stop by.
"What we've seen is it seems to have encouraged locals that may not have thought about coming to the museums or to bring friends and visitors to the museums. It's actually had that direct impact," he said.
People can download their Dine and Discover vouchers through the Service NSW app.
