When he first launched Cosmo Brewing in October last year, local brewer Ian Carman said his main goal was "to highlight the Bathurst region through those who live on the land."

Cut to a year later, and the Cosmo beer brand has expanded on tap to seven locations across Bathurst, Orange and Portland, and on Wednesday, will celebrate its first birthday at the same venue the brand was launched at: the Church Bar.
"The year has certainly gone quickly, and Wednesday will be a great opportunity for everyone to catch up and socialise again," Mr Carman said.
"When we launched Cosmo in 2020, we were also coming out of a largely restrictive winter, so it's almost like deja vu to be returning to the Church Bar in similar circumstances.
Mr Carman said the event will feature Cosmo's pilsner, sour and feijoa saison brews on tap, with giveaway prizes at the door prior to dinner.
"I feel really thankful that the community has received the Cosmo brews with such enthusiasm; the pilsner and sour I'm especially happy with, and they'll continue to be the backbone of the brand," he said.
"We have an extra pale ale [XPA] in the works for January, as well as some further seasonal beers using local produce."
Having started off offering takeaway options for customers in the form of 'growlers' [1.89-litre jugs], Mr Carman said the plan for the next 12 months is to up production and look to bottle beers into 'longnecks' [750-millilitre bottles].
"We're in the process of securing more brewing tanks to answer a growing demand, and expect to commence bottling beer by the end of summer," he said.
"By spring next year, we expect to have a wide range of new products ready to launch, and we should have some new Cosmo shirts for sale come Wednesday."
Wednesday's event at the Church Bar will run from 4pm to late. The event is free to attend, but bookings are essential.
