The couple took over in October 2019 and are yet to see Goldfields running at full capacity due to all of the COVID lockdowns ever since.
"We just took over in time for the V8 Supercars in 2019 so it was all go, go, go for the first little bit and then COVID hit," Ms Coyle said.
"Then we got a little bit at the end of 2020 and a little bit at the start of 2021 and then nothing again.
"... we haven't really had a full 12 months yet of this place functioning to its full potential, we're hoping 2022 is like year one for us."
With race week and year 12 graduations fast-approaching and weddings kicking off early next year, Ms Coyle and events and functions manager Michelle Rogers are looking forward to hosting again.
Ms Rogers said their calendar is filling up fast and she is hoping to finally give their brides the day they've been waiting for.
"Luckily and thankfully, most of our brides just moved across to the following year so that's great," she said.
"It would be nice to deliver one of those events.
"It's been a tough slog for them I'd imagine, some of them moved from 2020 to 2021 and now moved from 21 again to 2022."
Goldfields will be hosting the Bathurst Business Awards on December 4 which will be a great way for local businesses to celebrate moving forward from COVID.
Ms Coyle hopes that lockdowns are a thing of the past and normality returns.
