Maxwell’s 278 helped take Victoria to a total of 9-562 declared in their first innings, and Copeland’s depleted NSW side could only manage 243 in replay.
The Blues, who are missing the bulk of their bowling attack due to The Ashes, had no answer for Maxwell.
Copeland was hit all around the park during the Victorian innings, finishing with figures of 0-116 off his 34 overs.
Aaron Finch (76) and Cameron White (66) also belted the NSW attack around with strong contributions.
Victoria put on a quick fire 148 before declaring three wickets down.
Copeland picked up the wickets of Maxwell and Finch.
In their second innings chase of 468 late on Sunday NSW were sitting at 2-46.
