The young shop attendant was treated for concussion in Bathurst Base Hospital but later released following the assault at Kelso Foodworks on Thursday afternoon.
Supermarket owner Praba Kulasegaram said he had passed on CCTV footage of the incident to Bathurst police, who arrested the accused within moments of the robbery.
Mr Kulasegaram, who owned Kelso Foodworks for 13 years before buying the Kelso Centrepoint shopping centre late last year, said such incidents were rare but he would like to see more police patrols of the area.
"It is going well, there are more people coming through but we need more police patrols to send away some of the people who are just hanging around out the front," he said. "We are working to try and make this centre better for all of us."
The shocking CCTV footage
CCTV footage of the incident shows the man walking behind the counter before assaulting the supermarket attendant.
He then destroys the supermarket counter to gain access to the till, which he tucks under his arm before casually walking away.
Mr Kulasegaram said his young shop attendant had been shaken by the assault but had not been badly hurt.
Police will allege a 27-year-old man entered the Kelso Foodworks about 4pm on Thursday and demanded the female employee open the supermarket's cash register.
When she refused, the man left the supermarket but soon came back.
"The accused person went behind the counter and again demanded money," Chifley local area command crime manager Chief Inspector Luke Rankin said.
"He then punched the young woman in the face and removed the till from the register and left the location carrying the till."
Police were called to the supermarket before moving on to a home in Schofield Way, where police will allege they found the accused in the backyard of a dwelling.
"The accused person had the till and was trying to open it," Chief Inspector Rankin said.
"Police will allege he was using hedging shears at the time to try and open the till."
It will be alleged the man threatened officers with the hedging shears before he was arrested and taken to Bathurst police station.
He has been charged with aggravated robbery and using a weapon to avoid apprehension.
He appeared in Bathurst Local Court on Friday and entered no pleas.
He will be taken for a mental health assessment before any further action is taken.
Chief Inspector Rankin said the "circumstances suggest [the incident] wasn't premeditated and was impulsive conduct".
"It's very serious. Although the young girl was not admitted to hospital as a result of the assault, I imagine there would be some trauma still coming from that," he said.
Chief Inspector Rankin said police conducted regular patrols of that area and there were "very few" robberies across the Chifley district.
