The pair battled their way through the semi-finals to earn the right to fight for the annual matchplay crown at the Bathurst Golf Club.
Ninth seed Cooke beat Warren Matthews, Dan Ross and David Hitchick to reach the semi-finals then won his clash with Grant Bowman on the weekend.
Stibbard's run though the competition has been a memorable one, considering he only just snuck into the event as the 31st seed but would go on to take down all before him.
He beat second seed Matt Lester in the opening round then followed that up with wins over Steve McDonald and Tony Wilds before taking down club veteran Tony Pryce in an incredible semi-final game on the weekend.
Bathurst Golf Club general manager Brad Constable said the Stibbard-Pryce game was a rare spectacle.
"Daniel won that game on the 22nd hole, which is a marathon," he said.
"I'd just spoken to Tony who said he had an opportunity to close it out but they went on and Daniel got him on the fourth extra hole. That's a big game.
"Tony had a short putt earlier in the round which he missed and he thought to himself that it might come back to bite him, and it did.
"Kel Cooke is a fair golfer while Daniel remains a mystery who has done extremely well to get to where he is. Tony doesn't do much wrong so he's done well to pip him at the post.
"You see games go to the 19th or sometimes the 20th but by the 22nd? It's becoming a war of attrition by that point."
Meanwhile, preparations are taking place for one of the club's major events.
The pair are expected to play the final in several weeks for a modified Bathurst Open event on the 24th to the 25th of October.
Normally the event will attract golfers from across the state but given the current COVID-19 situation Constable said the club will need to restrict entries for the 2020 edition.
"We're limiting where visitors can come from. For now, we're sticking to the western health area to help restrict travel. The Open will be open to health advice at the time. At the moment it will be restricted to that area, plus Lithgow. I know for sure our own members will support the open very well." he said.
