Pain Et Tartinade [French for 'bread and spread'] is the first local business venture for owner Mohammed Masum ['Mo'], who hopes to carve out a new niche for organic produce in the region.
"There's no other organic bakery in the Bathurst region, so I want to share the love of artisan sourdough breads and pastries with the community," Mr Masum said.
"We have a vast variety of breads in stock, including wholemeal [wheat and rye], baguettes, walnut bread, five-grain and croissants, which are prepared fresh every morning."
Originally from Bangladesh, Mr Masum has built an impressive resume across Bathurst's hospitality scene, having previously worked at Piccolo's and Harvest Cafe.
He said organic baking requires a great deal of time and effort, but the finished product is well worth the commitment.
"The ingredients can be quite expensive to come by, and I have to drive great distances to pick them up, but with less preservatives involved, the breads are better for people wanting to maintain a healthy lifestyle."
"We also serve coffee [using a blend from Canberra roasters Ona] and have all-day breakfast and lunch menus."
The bakery is open from 6:30am to 3pm every day of the week.
Mr Masum said the venue may extend hours for select events within the Tremain's Mill precinct.
"As Carols at Tremain's is on this Sunday, we might open in the evening for carolers," he said.
"We want to promote this bakery as a vibrant community space where people from all walks of life can feel welcome."
Pain Et Tartinade is situated at 5 Keppel Street, within the heritage Victoria Stores building.
