The farewell event was attended by past and present staff members, regular patrons and visitors from far and wide who proudly called the 'E&C' their local during Mr Gibson and Ms Amerio's ownership.
Mr Gibson said it was a very emotional evening for him and Ms Amerio who, along with their children, Jamilia and Jake, have played vital roles in growing the venue's social character over their tenure.
"It's certainly hard for us to say goodbye to everyone, as the people have been the most important part in turning the venue into the wonderful place it is today," he said.
"The patrons are certainly who we will miss the most, as everything we've achieved wouldn't be possible without them."
Under Mr Gibson and Ms Amerio's ownership, the Elephant and Castle transformed from a venue in receivership into a $30,000/week business, with their first decision to revert the venue to its foundation name from 1849.
Mr Gibson said the venue has always thrived off being a welcoming place for patrons, with regulars displaying a great deal of loyalty.
"When we first got here, people would always come back at Christmas time to see their families, and they'd all stop by here as their memories of the venue would entice them to return," he said.
"I think that's what draws so many people back here time and again; to many, the venue holds such fond memories.
"We'd like to thank the people of Bathurst for their support over the years, it's been a terrific ride, and we're looking forward to seeing what the new owners have in store for the venue...we're confident it's in good hands."
