But that dream was tragically cut short in May last year when she died after suffering a medical episode while driving to Bathurst on the Mid Western Highway.
Miraculously she was able to stop the car so her two children, Levi and Ivy, were not injured. Passersby rendered first aid, but Lisa could not be saved.
Levi and Ivy and have since moved in with their maternal grandmother, Della, but the small family needs support.
Lisa's aunt, Mim Davies, has organised a family day fundraiser on Saturday, March 9 to help provide for the children's needs.
Ms Davies said the tragedy struck the family unexpectedly.
"Lisa was just 26 [when] she suffered a seizure whist driving; somehow she managed to stop the vehicle in the middle of the road before she passed away," Ms Davies said.
"Three people went to her aid, performing CPR on her until the ambulance arrived. First she was taken to Bathurst Hospital and placed on life support before being transferred to RPA in Sydney the next day where she remained on life support.
"Less the one week later, on May 16, her mother and family were advised Lisa was brain dead."
Ms Davies said she with with Lisa and the doctors for the final test. When it was clear nothing could be done to save the young mother, her organs were donated, giving four people - including a young child - a new chance at life.
Ms Davies said while Ivy was too young to understand what has happened, Levi remembers his mum and talks about her all the time.
She said she wanted to do something to help them.
"I am hoping to raise funds toward a future for Levi and Ivy," she said.
The Helping Hand fundraiser will be at the Royal Hotel, Carcoar on Saturday, March 9. There will be jumping castles, face painting, a chocolate wheel, sausage sizzle and Cold Rock ice cream.
There will also be a market stall and car boot sale, with spaces still available to rent [$50 for 6m x 3m or $25 fro 3m x 3m].
The event will run from 9am-2pm and the whole community is invited.
Ms Davies said anyone interested in being part of the event could contact her on 0414 492 181.
She said she hoped as many people as possible would make it a family day out to support Levi and Ivy. "This is all for them," she said.
