Prior to strict coronavirus regulations, Nikki's Cafe turned into an Italian restaurant called Calabro Southern Italian Cuisine on Saturday nights.

But across the last two months, owners Pino and Nikki Calabro have been unable to offer its sit-down Italian dinners (the Nikki's Cafe side of business still remains open for takeaways through the day), but now they're planning to offer the next best thing.
Starting on Monday, the eatery will be offering takeaway seven days a week.
"We probably ran it for about eight times on the Saturday night before coronavirus," Mr Calabro said.
"Last time we did it back in March, we were open to 11pm because we were that busy. It was a bloody good night.
"It's bloody good food too and no one makes it like me."
All meals are made on site, from risotto, ravioli, parmigiana, bolognese, boscaiola and marinara, with dishes providing an authentic taste of the flavourful Italian cuisine.
When takeaway starts, orders will have to be in by 11am, for meals to prepared and ready by 5pm for pick-up.
"We want to start doing takeaway as soon as possible," he said.
"Even when things go back to normal, we'll keep doing takeaway every day.
"I want to put it out to Bathurst for them to come try it. Everything is made to order here.
"To me, there's no food better than Italian."
Mr Calabro plans to continue doing takeaway seven days a week for his Italian meals when coronavirus restrictions are eased.
Nikki's Cafe opened back in February, with the co-owners moving from the Hawkesbury in Sydney's north-west.
Mr Calabro spoke to the Western Advocate in mid-April about the challenges his business is facing due to the coronavirus, as well as being a new business in a rural community.
