Their first business venture caps off a life-changing six months for Mr and Mrs Smith, which has also seen them welcome their first child, Orlando, and get married.
The pair commenced their first day as business managers last Thursday, and both are excited to build on the strong foundations left by previous managers Stu and Kirstyn Peel.
"I've always wanted to run my own kitchen, and having worked at the Kings Table for two years, and under Stu as an apprentice and supervisor for six, taking the reins here was the natural choice," Mr Smith said.
"We've always dreamed about running a restaurant together, with James as head chef and me as front of house, so we're really excited to get into it," Mrs Smith added.
While he intends to add his own flavour to the menu, Mr Smith said the success of the current courses will continue to drive dining options.
"I'll definitely play around with some of the burgers, but the menu already sells itself, and it's always been a big drawcard for the venue," he said.
"The noticeable changes will likely be on the specials board, which is a great avenue for chefs to test new things."
Mrs Smith said they've received a generous outpouring of support from the local community since commencing their new roles.
"If there's something we have changed, we now make our desserts in-house, and the sticky date pudding has already been received warmly," she said.
"We weren't at all sure what we were going into with the launch given the current COVID-19 situation across NSW, but the community has been very patient and have supported us within the regulations."
The Smiths said they will both endeavour to maintain the same culture of quality service nurtured by Stu and Kirstyn.
"Our standards have always been consistent, diners always know exactly what they're getting," Mr Smith said.
"We have some dedicated customers who visit the venue every year during race week as a tradition, they've waited all year to enjoy a meal here, and hopefully there's some new meals in the future they'll return for."
The pair have launched a new Facebook page for The Kings Table, and are currently a dinner-for-two promotion [valued at $100] for people who like, tag a friend and share a post from the page.
The Kings Table is situated at 60 George Street.
