Bathurst Regional Council gave the green light in early 2019 for the KFC outlet to open in the new Gateway development, opposite the former Harvey Norman site on the Great Western Highway.
It will be the second national fast food franchise in the development following the opening of the Bathurst region's first Oporto outlet in July.
Construction of the new outlet and car park have now been completed, including a drive-through section.

KFC posted on Facebook over the weekend that the outlet would open on Monday, December 20 - just in time to feed what is expected to be bumper holiday traffic across regional NSW this year.
"Come on in to KFC Kelso at 14 Ingersole Drive, Kelso, NSW and enjoy our famous original recipe fried chicken," the Facebook post said.
"It all started with one cook who created a finger lickin' good recipe more than 75 years ago, a list of secret herbs and spices scratched out on the back of the door to his kitchen."
A service station and childcare centre have also opened in the Gateway development.
