On Saturday, the couple finally tied the knot in front of 130 well-wishing guests at Hope Church in Kelso.
The guests included family, friends and numerous Glenray colleagues.
Glenray staff member Karen Eather, who helped plan the commitment ceremony, said Mr Barker and Ms Hancock had been looking forward to the occasion for many years.
"It was such a beautiful ceremony," Ms Eather said.
"Matt and Dot showed no signs of nervousness at all, and it was clear they've been ready for a long time."
The couple first met while students at Carenne School, and their relationship continued to blossom into their working lives.
"Dot used to live at home with her mum and dad, and she'd meet up with Matt at functions," Ms Eather said.
"They'd always hold hands on the dance floor and in the time I've known them, they've been inseparable."
Mr Barker asked Ms Hancock's mother, prior to her passing, for a blessing to marry her daughter in a strong showing of chivalry.
On the day, Ms Hancock was walked down the aisle by her father, Donald.
Ms Eather said it was heartwarming to see the wider community share in the celebration of the couple's love.
"It was pleasing to see people from inside and outside Glenray volunteer their time to make Matt and Dot's special day so memorable," she said.
"They helped Dot pick out everything she wanted, right down to a pink and white organ for the wedding march."
A host of local suppliers, including The Victoria Bathurst, Devil May Care florals, photographer Trent Cash and West Film Co, helped the couple experience their day free of strenuous wedding costs.
"They're the perfect everyday couple, and Matt puts together a cup of coffee and biscuits for Dot each night," Ms Eather said.
The couple has embarked on a trip to the NSW South Coast for their honeymoon.
